These Paleo cookies are not too sweet and make for a very satisfying treat —just the way a dessert should be.
The recipe makes about 24 cookies so you can half it if you want to make less.

- 300 grams Ground almonds
- 1 teaspoon(s) Bicarbonate of Soda (baking soda)
- 2 Egg(s)
- 60 mL Maple Syrup
- 1 teaspoon(s) Vanilla extract
- 120 mL Coconut Oil
- 150 grams dark chocolate chips

Directions
- Preheat oven to 180 degrees C/375 degrees F.
- Melt the coconut oil in a saucepan over a low heat.
- Sift together the dry ingredients in a medium mixing bowl.
- Beat in the eggs, maple syrup, vanilla, and coconut oil with a hand mixer until well combined.
- Fold in the chocolate chips.
- On a parchment-lined baking sheet, drop tablespoon-sized balls of cookie dough about 2 inches apart.
- Bake for 15 minutes. Remove from oven, leave to cool, and serve.
