These Paleo cookies are not too sweet and make for a very satisfying treat —just the way a dessert should be.

The recipe makes about 24 cookies so you can half it if you want to make less.

  • 300 grams Ground almonds
  • 1 teaspoon(s) Bicarbonate of Soda (baking soda)
  • 2 Egg(s)
  • 60 mL Maple Syrup
  • 1 teaspoon(s) Vanilla extract
  • 120 mL Coconut Oil
  • 150 grams dark chocolate chips

Directions

  1. Preheat oven to 180 degrees C/375 degrees F.
  2. Melt the coconut oil in a saucepan over a low heat.
  3. Sift together the dry ingredients in a medium mixing bowl.
  4. Beat in the eggs, maple syrup, vanilla, and coconut oil with a hand mixer until well combined.
  5. Fold in the chocolate chips.
  6. On a parchment-lined baking sheet, drop tablespoon-sized balls of cookie dough about 2 inches apart.
  7. Bake for 15 minutes. Remove from oven, leave to cool, and serve.
