I'm in love with this simple recipe for healthy oat & raisin cookies! They are made with just 3 ingredients that you're more than likely to have lying around the kitchen, and are so yummy and sweet without any refined sugar. 

They're a great treat for kids and also a brilliant option for an on the go breakfast in the morning. 

You can play around with this recipe and add more ingredients if you wish like vanilla, nuts etc.

  • 100 grams Oats
  • 1 large or 2 small Bananas
  • 70 grams Raisins

Directions

  1. Preheat the oven to 180C
  2. Blitz the oats into flour using a nutribullet or food processor
  3. Mash the banana until liquid and no more lumps form, it's easiest to do this in a food mixer but you can do it by hand if you like (will be a good arm workout!) 
  4. Add the oat flour to the mashed banana and mix until combined
  5. Stir through the raisins
  6. Scoop spoonfuls of the mixture onto a baking tray lined with parchment paper. Gently flatten them with the back of your spoon into round cookie shapes. It should make 9 cookies. 
  7. Bake in the oven for about 9 minutes. They will be soft and chewy in texture, as opposed to crunchy cookies. 
  8. Leave on the tray to cool slightly and enjoy. They will keep for a 4-5 days in an airtight container.
