I've only recently gotten into Sweet potato toast and am a total convert! It's such a fab and handy alternative to toast to have with your fave breakfast toppings!
And the benefits are the sweet potato will set you up for the day with really good slow release of energy. 
 
Both sweet and savoury topping options work really well so I've showed 2 different options in this recipe, and they are both absolutely yum!

The Avocado & poached egg sweet potato toast is 219 calories and the Peanut butter and banana one is 137 calories. The nutritional information below is both added together.

  • Sprinkle of Ground Cinnamon
  • 0.5 Avocado
  • 1 Egg(s)
  • Sea Salt
  • Black Pepper
  • Fresh Coriander
  • 1 tablespoon(s) Peanut Butter
  • 0.5 Banana(s)

Directions

  1. Slice a large sweet potato into 1cm thick slices and pop them in the toaster at the highest setting.
    Depending on the strength of your toaster it will take between 2 and 3 rounds in the toaster to cook. It will have nice charred marks when done and feel soft. 
  2. Meanwhile slice the avocado, and poach an egg. (scrambled or fried egg would work just as well!) 
  3. To make the peanut butter & banana sweet potato toast - 

    When the sweet potato toast is done, spread on the peanut butter and top with some slices of banana. Finish with a little sprinkling of cinnamon and enjoy! 
  4. To make the Avocado & Egg sweet potato toast -

    When the sweet potato toast is done, layer on the avocado slices and top with your egg. Season with sea salt and black pepper and finish with a sprinkling of fresh coriander. Tuck in!
