You won't believe how delicious this granola recipe tastes! The carrots add a delicious and healthy dimension - there's almost a hint of carrot cake flavour going on! 

For the mixed nuts you can use whatever nut combo you like, such as walnuts, hazelnuts, cashews, & almonds! 

Delicious with Greek Yogurt but you can also have with milk too. 

Do be careful to weigh out your portions as too much can mean you're going over your calories! This recipe makes about 11-12 servings.

  • Greek yogurt
  • 180 grams Ground almonds
  • 50 grams Desiccated Coconut
  • 2 Carrot(s)
  • 50 grams Sesame seeds
  • 150 grams Mixed nuts
  • 1 teaspoon(s) Ground Cinnamon
  • 2 teaspoon(s) Vanilla extract
  • 3 tablespoon(s) Coconut Oil
  • 4 tablespoon(s) Maple Syrup

Directions

  1. Preheat the oven to 180C.
  2. Grate the carrots.
  3. Melt the coconut oil and set aside.
  4. Roughly chop the mixed nuts and add them to a large bowl.
  5. Add all of the other dry ingredients to the bowl and mix to combine. 
  6. Add the grated carrot and mix again. 
  7. Add the melted coconut oil, maple syrup and vanilla extract. Mix everything together well. 
  8. Spread the mixture out evenly on a baking sheet and bake in the preheated oven for about 45 minutes.
  9. Check it every 10-12 minutes, take it out of the oven and turn it with a large spoon so that it cooks evenly.
  10. When it’s a toasted golden colour then it's done. Remove from the oven use the spoon to break up any big chunks.
  11. Leave the granola to cool completely so that it gets nice and crunchy, then store it in an airtight container like a kilner jar. 
  12. Serve 50grams with 150g real greek yogurt per person for a delicious breakfast.
