Baked eggs are such a simple yet elegant little dish that make a fantastic breakfast or snack. They're also gorgeous for a relaxing brunch at the weekend. Baked for just a short amount of time, you end up with something so good it's hard to believe how effortless they were to prepare.

The great thing is you can keep it simple for anyone who likes their eggs unadorned and then jazz it up for others who prefer the extra trimmings. Things like mushrooms, spinach, tomato, chorizo are great with baked eggs but the list could go on!

  • 2 slice(s) Prosciutto
  • 1 handful(s) Fresh parsley
  • Black Pepper
  • Sea Salt
  • Olive Oil

Directions

  1. Preheat the oven to moderate, about 180C.
  2. Grease 2 ramekins with just a little bit of olive oil.
  3. Roughly chop the prosciutto and parsley.
  4. Line the base of the ramekins with the chopped prosciutto, and sprinkle with the chopped parsley.
  5. Break an egg into each ramekin, season with sea salt and freshly ground black pepper, and place the ramekins into a roasting tin that's half filled with hot water.
  6. Bake in the oven for 9-10 minutes, or until the white is just set. This amount of time will give you a runny yolk. If you prefer your eggs hard leave in the oven for about 12-14 minutes.Take care not to overcook them which is easy to do. The eggs will continue to cook when you take them out of the oven so it's good to under-bake them slightly.
  7. Serve immediately!
