- 30 grams Desiccated Coconut
- 1 teaspoon(s) Vanilla extract
- Ground Cinnamon

Directions
- Preheat your oven to 325°F.
- Spread the desiccated coconut and oats onto a baking sheet and bake for about 8 minutes; stir the coconut and oats and rotate the sheet.
- Bake for 8 more minutes or until coconut and oats are toasted.
- In a bowl, whisk together vanilla extract, melted coconut oil, honey, and a good pinch of cinnamon until very smooth.
- Stir the oat mixture into the honey mixture until well coated.
- Prepare a baking sheet by lining it with a waxed paper or silicone liner.
- Evenly spread the coconut oat mixture onto the sheet and bake for about 15 minutes more or until the granola is toasted.
- Remove from oven, stir and transfer to a wire rack to cool before serving.
