  • 30 grams Desiccated Coconut
  • 0.5 tablespoon(s) Honey
  • 75 grams Oats
  • 0.5 tablespoon(s) Coconut Oil
  • 1 teaspoon(s) Vanilla extract
  • Ground Cinnamon

Directions

  1. Preheat your oven to 325°F.
  2. Spread the desiccated coconut and oats onto a baking sheet and bake for about 8 minutes; stir the coconut and oats and rotate the sheet.
  3. Bake for 8 more minutes or until coconut and oats are toasted.
  4. In a bowl, whisk together vanilla extract, melted coconut oil, honey, and a good pinch of cinnamon until very smooth.
  5. Stir the oat mixture into the honey mixture until well coated.
  6. Prepare a baking sheet by lining it with a waxed paper or silicone liner.
  7. Evenly spread the coconut oat mixture onto the sheet and bake for about 15 minutes more or until the granola is toasted.
  8. Remove from oven, stir and transfer to a wire rack to cool before serving.
