My Buckwheat & Cacao “Coco Pops” Granola

Healthy coco pops anyone?!! I was experimenting with a new buckwheat granola recently and managed to come up with what can only be described as tasting like coco pops.. and from buckwheat! You can imagine how delighted I was with myself!
Buckwheat is a grain free, gluten free power food! It is high in protein, fiber and essential vitamins and minerals, making this yummy granola a super nutritious breakfast option.
This recipes makes a 1 Kg batch so about 25 servings. A serving size is about 40 grams :)

- 100 mL Coconut Oil, melted
- 500 grams Buckwheat
- 100 grams Mixed Pumpkin/ Sunflower seeds
- 4 tablespoon(s) Chia seeds
- 4 tablespoon(s) Raw 100% cacao powder
- 120 grams Walnuts
- 120 grams raw almonds
- 120 mL Maple Syrup

Directions
- Pre-heat the oven to 160C.
- Roughly chop the walnuts and almonds.
- Combine the buckwheat, chia seeds, raw cacao, walnuts, almonds, and seeds in a large bowl.
- Add the melted coconut oil and maple syrup and mix thoroughly until well combined.
- Spread the mixture out in an even layer on 2 baking trays lined with parchment paper.
- Bake at 160C for 40-45 mins until crispy. Make sure to turn the granola every 10 minutes, otherwise it could burn! Leave to cool completely before storing in airtight container.
