These crepes are so quick and easy to make, they’re packed with protein from the egg white, and micronutrients and fibre from the oats… making these crepes a super nutritious and filling breakfast!  AND the best part is they taste just as yummy as traditional crepes with sugar and lemon!

 

I love these simply with lemon juice and Dr Coy’s Stevia, but you could add other toppings if you fancy.. just bear in mind this will increase the number of calories.

  • 25 grams Oats
  • To Serve: lemon juice
  • 4 Egg white(s)
  • Coconut Oil
  • 1 teaspoon(s) Stevia
  • Stevia

Directions

  1.  Blitz the oats, egg white & stevia in a nutribullet or food processor until you get a really smooth batter. It will be quite runny.
  2. Heat a small non-stick frying pan over a high heat (it’s important that it is non-stick or you might not be able to flip the crepes)
  3. When hot, wipe the pan with a little bit of coconut oil using kitchen roll.
  4. Pour in some of your batter to just coat the pan in a thin layer. Cook for a minute until it’s easy to turn over and then flip. Continue cooking for another minute and remove onto a plate.
  5. Repeat with the rest of the batter, it should make about 4 - 5 thin crepes.
  6. Serve sprinkled with Dr Coy’s Stevia and lots of fresh lemon juice. Yum!
