This is an easy breakfast dish that is loaded with protein. You can customise it to your liking, so use whatever veggies you like or have in your fridge. This is a great way to use up leftovers.

- 1 teaspoon(s) Olive Oil
- 3 Egg(s)
- 0.5 Onion
- 1 handful(s) Mushrooms
- Black Pepper
- 1 slice(s) Bacon

Directions
- Chop the onion and slice the mushrooms. Slice the bacon into pieces.
- Heat a large pan over medium heat and add the olive oil. When the oil is hot add the bacon and onion and fry until onions are soft and bacon is cooked.
- Add the mushrooms and spinach and saute until tender.
- Beat eggs in a large bowl and add to the pan. Season with sea salt and freshly ground black pepper.
- Cook for a minute or two until the egg is just set but still quite soft. Serve immediately.
