These protein pancakes are magic! With just eggs and protein powder in the batter, they are a super way to start your day with your macro proportions in check! And they're delicious too!

- 1 teaspoon(s) Desiccated Coconut
- 35 grams Whey Protein Powder
- 50 grams Greek yogurt
- 0.5 Banana(s)
- 1 teaspoon(s) Coconut Oil

Directions
- Mix together the eggs and whey protein powder, using a food processor ideally or handheld whisk.
- Next make some flavoured yogurt to go with the pancakes. Mash the banana (make sure it's ripe) and mix with the greek yogurt.
- Add the desiccated coconut and mix everything together well.
- Heat a non-stick frying pan over a high heat and when hot add a teaspoon of coconut oil.
- Pour half the batter into the hot pan, swirl it around a bit, and cook for a minute on each side until golden brown.
- It's nice to have it a bit gooey still in the centre!
- Slide the pancake onto a plate and repeat with the remaining batter.
- Serve the 2 pancakes with the flavoured yogurt and a few blueberries on top and tuck in!
