Custard is a traditional British dessert sauce made from eggs, sugar and milk. This version is reinvented for the Paleo diet and uses almond milk and honey for flavour. Serve it with fresh fruit for a warm, comforting dessert on a cold winter day.

Any leftover custard will last in the fridge for a few days.

  • 480 mL Almond milk
  • 6 Egg yolk(s)
  • 3 tablespoon(s) Honey
  • 1 teaspoon(s) Ground Cinnamon
  • 0.5 teaspoon(s) Nutmeg
  • 1 teaspoon(s) Vanilla extract

Directions

  1. Warm the almond milk in a saucepan until just simmering.
  2. Beat the egg yolks in a small mixing bowl.
  3. Slowly ladle half the almond milk into the eggs, a few drops at a time, vigorously whisking so the eggs don’t cook.
  4. Transfer the eggs and milk mixture to the saucepan and return to the heat.
  5. Add the remaining ingredients and cook over medium heat for 8 minutes, stirring constantly, until the custard thickens. Serve hot with fresh fruit.
