Warm up a cold night with this hearty beef stew. It has more colour and flavour than a traditional beef stew, thanks to the addition of bell peppers and tomato puree. It's a meal all in itself!

- 2 tablespoon(s) Olive Oil
- 400 grams stewing beef
- 1 Onion
- 1 Red pepper
- 2 Tinned Tomatoes
- 2 tablespoon(s) Tomato puree
- 1 teaspoon(s) Dried Thyme
- 0.5 teaspoon(s) Dried chilli flakes
- Black Pepper
- Sea Salt

Directions
- Chop the onion.
- Deseed and chop the red pepper.
- Add the olive oil to a large saucepan over medium heat. Add the pieces of stewing beef and cook until browned, turning to brown all sides of the meat.
- Add the onion and pepper and continue cooking an additional 5 to 8 minutes, or until the vegetables are tender.
- Stir in the tinned tomatoes, tomato puree, paprika, thyme, chilli flakes, and 240ml water and bring to a boil.
- Lower the heat to medium-low, cover and simmer for 60-75 minutes, or until tender. Taste and season with sea salt and freshly ground black pepper. Serve hot.
