​This is one of the easiest and most comforting dishes to make! Consider this recipe like a template you can customize for your tastes and what you have on hand in the fridge.

Feel free to swap the beef for any other protein of choice, the squash for sweet potato and the spinach for swiss chard or kale, for example.

  • 1 teaspoon(s) Dried Thyme
  • 0.5 Tinned Coconut Milk
  • 0.5 teaspoon(s) Coconut Oil
  • 200 grams Butternut Squash
  • 0.5 teaspoon(s) Ground Cinnamon
  • 225 grams Minced Beef
  • 0.5 teaspoon(s) Sea Salt
  • 0.25 teaspoon(s) Black Pepper
  • 1 large bunch Baby Spinach

Directions

  1. Preheat the oven to 400 degrees F/200 degrees C.
  2. Peel the butternut squash using a knife and chop into bite-sized chunks.
  3. Add to a roasting tray and toss in 1/2 tablespoon of olive oil.
  4. Roast in the oven for 30-40 minutes until tender.
  5. Heat a large frying pan or skillet over medium-high heat, then add 1/2 teaspoon coconut oil.
  6. Add the minced beef to the pan, and season with the salt and pepper.
  7. Use a wooden spoon to break up the meat, stirring occasionally until the meat is browned and cooked through, about 5 to 7 minutes.
  8. Lower the heat to medium-low and add the roasted butternut squash, spinach, coconut milk, cinnamon and thyme.
  9. Stir until everything’s well combined and warmed through, about 3 to 5 minutes.
