This is such a colourful salad it looks really gorgeous on the plate. The crunchy, sweet, tangy, spicy combination of this salad is simply amazing.

- 1 tablespoon(s) Olive Oil
- 1 Mango(es)
- 1 handful(s) Green beans
- 0.5 Red pepper
- 0.25 Red onion
- 1 handful(s) Cashew nuts
- 1 handful(s) Fresh mint leaves
- 1 Lime
- 0.5 Fresh red chilli
- 1 teaspoon(s) Maple Syrup
- 1 handful(s) Fresh Coriander
- Sea Salt

Directions
- Firstly toast the cashew nuts on a dry frying pan for a few minutes, stirring occasionally, until they start to turn golden. Remove from the pan and roughly chop them.
- Peel and slice the mango into thin strips.
- Halve the green beans lengthways into thin strips.
- Slice the red pepper into very thin strips.
- Thinly slice the onion.
- Deseed and finely chop the chilli.
- Chop the coriander and the mint.
- Make the dressing by mixing together the juice of 1 lime, the olive oil, maple syrup, red chilli, pinch of salt and the chopped coriander.
- In a bowl toss together the mango, green beans, pepper, and onion. Pour over the salad dressing and toss well to coat everything evenly in the dressing.
- Just before serving sprinkle the chopped mint and chopped cashew nuts over the salad.
