This super healthy asparagus salad is a not just nutritious, it’s a treat for the palate. The addition of avocado makes it nice and filling and the tomatoes add lovely flavour too.

- 1 tablespoon(s) Olive Oil
- 2 tablespoon(s) lemon juice
- 1 teaspoon(s) Dijon Mustard
- 6 Asparagus
- 1 handful(s) Cherry tomato(es)
- 1 Avocado
- 1 large bunch Fresh Basil leaves
- Black Pepper
- Sea Salt

Directions
- Bend the asparagus spears until they snap and discard the woody ends.
- Steam the asparagus spears for 5-7 minutes until tender.
- Peel the avocado and dice into cubes.
- Halve the tomatoes.
- Roughly tear the basil leaves.
- Place the cooked asparagus, tomatoes, avocado and basil in a large bowl.
- Combine the olive oil, lemon juice and mustard in a separate small bowl. Season with sea salt and freshly ground black pepper.
- Drizzle the salad with the dressing and toss to coat. Serve immediately.
