Asian Chicken in Lettuce Wraps

This recipe is actually a speciality from Lao and is called ‘larb’. It consists of minced chicken with aromatics served in lettuce cups. It’s a gorgeous way to enjoy chicken breast as it’s very moist and flavorful and once it’s all prepared, it cooks in almost no time. To make it easier to prep, use a food processor to mince the meat finely

- Sriracha
- 0.5 teaspoon(s) Coconut Oil
- 2 Chicken Breast
- 1 spring onion(s)
- 1 Garlic clove(s)
- 1 bunch of coriander
- 1 inch piece lemongrass
- 0.5 green chilli
- Lettuce Leaves
- 1 tablespoon(s) Dark Soy Sauce

Directions
- Roughly chop the chicken breasts.
- Slice the spring onions.
- Chop the garlic.
- Very finely chop the lemongrass.
- Deseed the green chilli and chop.
- Place all the ingredients, except the coconut oil, lettuce leaves, and dark green parts of the spring onion, in a food processor and pulse until the chicken is broken down into very small pieces and everything is finely mixed together.
- Heat a large frying pan over mediumhigh heat, and then add the coconut oil.
- Add the chicken mixture and cook, breaking up the chunks with a wooden spoon, for about 5 to 6 minutes or until the chicken is fully cooked.
- Serve in a bowl with lettuce leaves on the side for wrapping it up to serve.
- Garnish with the green parts of the spring onion.
- Use some Sriracha for a topping if you wish.
