We are fairly obsessed with cauliflower fried "rice" as it is one of those cheat ingredients that actually tastes legit. No joke.

It's also brought Chinese fried rice into the healthy category!  

As a fried rice look-alike, this dish can hold its own. The cauliflower is chewy and nubbly in all the right rice-like ways. Bits of egg and tender vegetables also make it a satisfying meal on its own. This still feels like comfort food — just comfort food that's sneaking a few more vegetables in!

  • 0.5 head of Cauliflower
  • 2 slice(s) Bacon
  • 2 Egg(s)
  • 1 inch piece Ginger
  • 0.5 Onion
  • 1 handful(s) Mushrooms
  • 1 Scallion(s)
  • 1 bunch Fresh Coriander
  • 1 bunch Fresh Basil leaves
  • 1 bunch Fresh mint leaves
  • Black Pepper
  • Sea Salt
  • dash(es) Fish sauce
  • 2 teaspoon(s) Coconut Oil
  • 3 tablespoon(s) Dark Soy Sauce
  • dash(es) Lime juice

Directions

  1. Break the cauliflower into florets and then pulse them in a food processor until the pieces are the size of rice.
  2. Chop the bacon into small dice.
  3. Finely grate the ginger.
  4. Finely chop the onion.
  5. Finely slice the mushrooms.
  6. Finely slice the scallions.
  7. Chop the coriander, basil, and mint.
  8. Heat one teaspoon coconut oil in a large frying pan over a medium heat and add the bacon pieces. Fry until the bits turn crispy.
  9. While the bacon is cooking, whisk two eggs in a small bowl with some sea salt and freshly ground black pepper.
  10. When the bacon is done, remove to a separate plate.
  11. Pour the whisked eggs into the hot bacon fat and fry a thin egg omelet. Remove the omelet from the pan and slice it thinly. Set it aside.
  12. Increase the heat to medium-high, add another teaspoon of coconut oil and add the chopped onion. Season with sea salt and freshly ground black pepper. Once the onion softens, add the sliced mushrooms and stir-fry everything until the mushrooms brown. 
  13. Add the ginger and stir it around for 30 seconds, then add the cauliflower. Season with sea salt and freshly ground black pepper once again. 
  14. Put a lid on the pan and lower the heat to low. Cook covered for about 5 minutes.
  15. When the cauliflower is tender (but not too mushy), add the soy sauce, the fresh herbs, and add the crispy bacon bits and sliced egg omelet. 
  16. Add a squeeze of lime juice and a splash of fish sauce. Toss everything together and serve.
