Asian Sesame Salmon with Stir­-Fried Greens

Ginger, Lime, Sesame oil and sesame seeds combine to make a gorgeous Asian combo in this simple salmon recipe. The stir-fried greens are a great option as a side for lots of main courses!

  • 1 teaspoon(s) Coconut Oil
  • 1 teaspoon(s) Honey
  • 1 tablespoon(s) Sesame Oil
  • 2 teaspoon(s) Sesame seeds
  • 1 tablespoon(s) low sodium tamari sauce
  • 1 tablespoon(s) Cider Vinegar
  • 1 inch piece Ginger
  • 0.5 Lime
  • 1 Salmon fillet(s)
  • 1 tablespoon(s) Fresh Coriander
  • 1 bunch tenderstem broccoli
  • Sea Salt
  • Black Pepper

Directions

  1. Preheat the oven to 400 degrees F/200 degrees C
  2. Finely grate the ginger. 
  3. In a small bowl, mix together the honey, vinegar, low sodium tamari sauce, 1 tablespoon of the sesame oil, ginger, and the juice of half a lime. Set aside. 
  4. Fill a pot with one third of water and bring to the boil. 
  5. Add the tenderstem broccoli and simmer for 2 minutes. Drain and set aside.
  6. In an oven­-proof pan, melt the coconut oil over a medium high heat.
  7. Place the salmon into the pan with the skin ­side up. Sear for 3-4 minutes until browned. 
  8. Flip over and drizzle with half of the honey and sesame mixture. 
  9. Transfer the pan to the oven for 5-6 minutes or until the salmon is just cooked through (be careful not to overcook). 
  10. While the salmon is in the oven, stir-fry the tenderstem broccoli.
  11. Heat a frying pan over a medium-high heat and add 1 tsp sesame oil.
  12. Add the blanched broccoli to the pan along with 1 tsp of sesame seeds. Season with salt and freshly ground black pepper and stir-fry for 1-2 minutes.
  13. When the salmon is cooked, remove from the oven and top with the remaining honey mixture. 
  14. Sprinkle the chopped coriander and remaining sesame seeds over the salmon and serve with the broccoli.
