Epic Chocolate Mousse

This chocolate mousse is the best chocolate mousse ever! And the only ingredients are dark chocolate and eggs so you can enjoy it guilt free, just make sure the chocolate is over 80% cocoa solids.

It makes about 6 portions so good if you’re having friends over or to keep in the fridge for the week as a little treat after dinner!

Directions

  1. Break the chocolate into pieces and melt it in a heatproof bowl over a saucepan of simmering water (do not let the bottom of the bowl touch the water). Allow the chocolate to melt without stirring and just when it is nearly completely melted you can help it along by gently stirring with a wooden spoon.
  2. Once melted remove the bowl from the saucepan and allow to cool.
  3. Separate the eggs.
  4. In a bowl lightly beat the yolks with a wooden spoon.
  5. Whisk the whites until they form stiff peaks, in an electric mixer with the balloon whisk or using a handheld electric whisk.
  6. When the chocolate has cooled completely, gradually mix in the egg yolks. Then very gently and gradually fold in the egg whites in batches.
  7. Pour the mousse into a glass bowl and leave in the fridge to set for a few hours - overnight would be even better.
