Mocha Protein Almond Butter

​­ Almond butter is a great source of healthy fats, but the plain stuff can be a bit boring. This recipe for homemade almond butter adds cocoa and coffee for a deep mocha flavor, and with a scoop of your favorite protein it bumps up the amino acid content. Use flaked almonds if you can, the almond butter will taste better. Make the full batch and store the butter in the fridge to have on hand as a snack!

  • 2 tablespoon(s) protein powder
  • 130 grams Almond flakes
  • 1 teaspoon(s) ground coffee
  • 2 tablespoon(s) unsweetened cocoa powder
  • 1 tablespoon(s) Honey
  • 0.25 teaspoon(s) Sea Salt
  • 1 tablespoon(s) Coconut Oil

Directions

  1. Preheat the oven to 350 degrees F/180 degrees C and line a large baking sheet with parchment paper.
  2. Spread the flaked almonds in a single layer on the sheet and bake for about 8 minutes, until the almonds are golden brown. It’s a good idea to stir them halfway through so they brown evenly. Make sure they don’t burn!
  3. Melt the coconut oil in a saucepan over a low heat.
  4. In a food processor, combine the roasted flaked almonds, cocoa, protein powder, honey, melted coconut oil, coffee and salt.
  5. Process on high until the nuts are broken down and everything is smooth. You may need to stop the blender and scrape down the sides a couple of times to get all the nuts incorporated. Store in an airtight container in the refrigerator.
