Cashew Butter Balls

These cashew butter balls are made raw so you don’t have to bake them, just leave them to harden in the fridge.

The good thing is that you can make a full batch of 30 as in this recipe, and just eat them a bit at a time as you go through the week. Having snacks made ahead of time is really helpful for sticking to the FitoMetrics Nutrition programme. These are so simple to make and so delicious they'll no doubt become one of your staple snacks!

  • 175 grams pitted dates
  • 150 grams Cashew nuts
  • 120 grams Cashew butter

Directions

  1. Roughly chop the pitted dates.
  2. Place the chopped dates in a food processor and process until smooth.
  3. Add the cashew nuts and cashew butter and process until the mixture forms a dough ball (you may need to scrape down the sides and help the mixture along to form a dough ball).
  4. Once a dough ball has formed transfer the dough to a plate. 
  5. Form the mixture into 30 equal sized balls with your hands, refrigerate for at least an hour to harden and enjoy.
