- 1 tablespoon(s) Olive Oil
- 0.5 Onion
- 0.5 Green Pepper
- 50 grams Chorizo Sausage
- 3 Egg(s)
- Black Pepper
- Sea Salt

Directions
- Chop the onion and slice the green pepper.
- Slice the chorizo Sausage into 1cm slices.
- Slice the avocado.
- In a medium non-stick pan, heat the oil over medium heat.
- Add the onion and pepper and cook until soft. Add the chorizo and cook until it starts to brown.
- Add the eggs and stir continuously until eggs are cooked through. Season with sea salt and freshly ground black pepper.
- Top with avocado slices to serve.
