These are so simple they’re a winner! They’re great to throw together for a protein packed brekkie and also make the perfect snack, loaded with healthy fats. They’re great eaten hot or cold.

  • 1 Avocado
  • 2 pinch(es) Garlic Powder
  • 2 pinch(es) Sea Salt
  • 2 pinch(es) Black Pepper
  • 2 Egg(s)

Directions

  1. Preheat the oven to 350 degrees F/180 degrees C.
  2. Halve the avocado and remove the pip.
  3. Scoop about a third of the avocado flesh from each half. You’re trying to make just a bit more room for the egg.
  4. Sprinkle each avocado half with a pinch of garlic powder, salt and pepper.
  5. Arrange each avocado half so it’s sitting on top of the holes of a muffin tin.
  6. Gently crack an egg into each half. Bake these for 12 to 15 minutes or until the white is set.
