No Bake Healthy Energy Bars

These are great bars for an afternoon snack, or breakfast on the go. They're packed with nuts and dried fruit which will give you a good energy boost. 

You can adapt the recipe easily by trying different nuts or fruit and they're very handy to make as they don't require baking! The recipe makes about 20 small bars, but if you want to make them bigger just be conscious of the increase in calories per bar!

  • 350 grams pitted dates
  • 70 grams macadamia nuts
  • 40 grams raw almonds
  • 45 grams Dried apple
  • 2 tablespoon(s) Coconut Oil
  • 2 tablespoon(s) Ground Cinnamon

Directions

  1. Place the pitted dates, macadamia nuts, apples, and almonds in a food processor and pulse until everything is broken up into small chunks.
  2. Transfer to a mixing bowl and add in 2 tablespoons of melted coconut oil and 2 tablespoons of ground cinnamon.
  3. Using your hands mix everything together well. 
  4. Once mixed transfer the mixture to a tray lined with parchment paper and then flatten out and press down with your hands. 
  5. Transfer the tray to the fridge to harden for a few hours.
  6. Once hardened, remove the tray from fridge and cut the mixture into the size of bars you want. They will last in an airtight container in the fridge for about 2 weeks.
