You can treat these baked apples as either a dessert or a breakfast treat. Choose tart but sweet apple varieties that have a firm texture. Fuji or Pink Lady apples work well and make sure you use large ones for this recipe!

  • 0.5 teaspoon(s) Ground Cinnamon
  • 1 teaspoon(s) Raisins
  • 1 teaspoon(s) Walnuts

Directions

  1. Preheat oven to 170 degrees C/350 degrees F.
  2. Wash and core the apple, making sure not to cut all the way through the bottom of the apple.  
  3. Melt the coconut oil in a small saucepan.
  4. Chop the walnuts.
  5. Mix together the juice and zest of half a lemon, the coconut oil, honey, cinnamon, raisins, and walnuts in a small bowl.
  6. Stuff the apple with the mixture.
  7. Place the apple on a baking sheet and bake for 30 minutes, or until tender. Serve immediately.
