Almond Baked Peaches

This is a top healthy dessert! It is also Paleo friendly. The combo of peach and almond is absolutely to die for... trust us!

- 35 grams Ground almonds
- 1 tablespoon(s) Maple Syrup
- 15 grams Almond Butter
- 1 Egg yolk(s)
- 0.5 Lemon
- 0.5 Orange

Directions
- Preheat the oven to 180C.
- Cut the peaches into halves and discard the pips.
- Melt the almond butter in a saucepan.
- Scoop a bit of flesh out (not all the flesh) of four of the peach halves and add it to the flesh of 1 whole peach. Mix well to make it into a purée. Add the maple syrup, ground almonds, the zest of 1/2 a lemon, the zest of 1/2 an orange, egg yolk, and melted almond butter. Mix everything together well.
- Place the remaining four peach halves, hollow side up, into a snug ovenproof dish. Using a spoon, divide the almond peach filling between the peach halves.
- Bake in the oven for 40-45 minutes and then tuck in. Delish!
