Peaches are high in sugar so they should be an infrequent indulgence but when they’re in season, it’s hard to resist. Select peaches that give slightly to the touch and have a fresh aroma.
This is a deliciously simple and healthy dessert and would be lovely served with coconut yogurt.

Directions
- Preheat the oven to 350 degrees F/170 degrees C.
- Cut the peach in half and remove the stone.
- Place the peach halves on a baking sheet.
- Melt the coconut oil in a saucepan over a low heat.
- Transfer to a small below and mix in the remaining ingredients.
- Fill the peach cavities with the mixture. Bake for 15 to 20 minutes, or until tender and juicy.
