Chicken & Smoky Bacon Salad

This is a lovely simple salad to use up some leftover roast chicken however it also works well with cooked chicken breasts. 

The balsamic syrup adds a gorgeous sweetness to the salad, this one is a firm favourite!

  • Balsamic vinegar
  • 1 Red onion
  • 1 Chicken Breast
  • 2 handful(s) Rocket
  • 1 handful(s) Pine nuts
  • Black Pepper
  • 2 slice(s) Smoky Bacon
  • 1 tablespoon(s) Olive Oil
  • Sea Salt

Directions

  1. Pour some balsamic vinegar into a small saucepan over a low heat. Allow to reduce to about half it's original volume and it has turned thick and syrupy (be careful to not let it reduce too much). You can make just the amount you want for this salad or you can make a big batch and store the extra syrup in a bottle or jam jar. This will last for a few months and is handy to have for drizzling over salads or grilled meats.
  2. Roughly chop the onion into chunks.
  3. Slice the smoky bacon into strips.
  4. Tear the leftover chicken into strips or grill the chicken breast until cooked and then cut into strips. 
  5. Heat a frying pan over a medium high heat, add 1 tablespoon of olive oil and fry the bacon until crisp and golden. Remove from pan with a slotted spoon and set aside on a plate.
  6. Add the onions and pine nuts to the bacon fat in the pan and fry for about 10 minutes until the onions are caramelised. Add the chicken to the pan and toss around to warm through. Put the bacon back into the pan and mix around with the other ingredients. 
  7. Pour everything from the pan into a big bowl along with the rocket leaves. Season with sea salt and freshly ground black pepper (be careful with the salt as the bacon will already make the salad salty!). Drizzle generously with the balsamic syrup and tuck in straight away!
