Chinese Chicken Lettuce Wraps

	  You’ll find these tasty morsels on the menu of most nice Chinese restaurants. Soy sauce is a fermented food, high in sodium and not particularly healthy. We’ve substituted garlic and tahini paste for flavour but use soy sauce if you like.

- 2 inch piece Ginger
 - 2 Chicken Breast
 - 0.5 Onion
 - 1 Carrot(s)
 - 1 handful(s) Almond flakes
 - 1 handful(s) Fresh Coriander
 - Sea Salt
 - Black Pepper
 - 2 tablespoon(s) Olive Oil
 - 1 tablespoon(s) Sesame Oil
 - 1 tablespoon(s) Tahini Paste
 - 1 Garlic clove(s)
 - Lemon
 - Lettuce Leaves

Directions
- Slice the chicken breasts into thin strips.
 - Add 1 tablespoon of olive oil in a frying pan over a medium high heat. Add the chicken strips, season with sea salt and freshly ground black pepper, and fry until fully cooked. Remove from pan.
 - Meanwhile, finely slice the onion and carrot. Finely chop the coriander.
 - Finely chop the ginger and garlic.
 - For the dressing, mix together the remaining tablespoon of olive oil, the sesame oil, tahini paste, and chopped ginger and garlic.
 - Combine the cooked chicken strips, onion, carrot, almonds, and coriander in a mixing bowl. Season with sea salt and freshly ground black pepper.
 - Fold the dressing into the chicken mixture. Add a squeeze of lemon juice.
 - Wrap the chicken mixture in lettuce leaves to serve.
