Chinese Chicken Lettuce Wraps

You’ll find these tasty morsels on the menu of most nice Chinese restaurants. Soy sauce is a fermented food, high in sodium and not particularly healthy. We’ve substituted garlic and tahini paste for flavour but use soy sauce if you like.

  • 2 inch piece Ginger
  • 2 Chicken Breast
  • 0.5 Onion
  • 1 Carrot(s)
  • 1 handful(s) Almond flakes
  • 1 handful(s) Fresh Coriander
  • Sea Salt
  • Black Pepper
  • 2 tablespoon(s) Olive Oil
  • 1 tablespoon(s) Sesame Oil
  • 1 tablespoon(s) Tahini Paste
  • 1 Garlic clove(s)
  • Lemon
  • Lettuce Leaves

Directions

  1. Slice the chicken breasts into thin strips.
  2. Add 1 tablespoon of olive oil in a frying pan over a medium high heat. Add the chicken strips, season with sea salt and freshly ground black pepper, and fry until fully cooked. Remove from pan.
  3. Meanwhile, finely slice the onion and carrot. Finely chop the coriander. 
  4. Finely chop the ginger and garlic. 
  5. For the dressing, mix together the remaining tablespoon of olive oil, the sesame oil, tahini paste, and chopped ginger and garlic.
  6. Combine the cooked chicken strips, onion, carrot, almonds, and coriander in a mixing bowl. Season with sea salt and freshly ground black pepper.
  7. Fold the dressing into the chicken mixture. Add a squeeze of lemon juice.
  8. Wrap the chicken mixture in lettuce leaves to serve.
