This is an easy and delicious meal for lunch or dinner. The sun-dried tomatoes complement the balsamic chicken amazingly well, and served with a side of steamed green veggies it is a very satisfying meal.

- 1 Chicken Breast
- 2 tablespoon(s) Balsamic vinegar
- 1 tablespoon(s) Olive Oil
- 0.5 tablespoon(s) Dijon Mustard
- 0.5 tablespoon(s) Fresh thyme leaves
- Black Pepper
- Sea Salt
- 1 tablespoon(s) Sun-dried tomatoes

Directions
- Chop the thyme leaves.
- Combine all ingredients in a bowl except the chicken and the sun-dried tomatoes, and mix well.
- Add the chicken breast to the bowl with the marinade and toss to coat.
- Cover the bowl with cling film and leave in the fridge to marinade for at least 30 minutes.
- Heat a frying pan on medium heat and when hot add the chicken with its marinade. Cook for about about 8-10 minutes each side depending on the thickness of the breast, until cooked through.
- Serve the chicken topped with some sun dried tomatoes marinated in olive oil and some steamed vegetables on the side.
