Balsamic Chicken with Sun-Dried Tomatoes

This is an easy and delicious meal for lunch or dinner. The sun-dried tomatoes complement the balsamic chicken amazingly well, and served with a side of steamed green veggies it is a very satisfying meal.

  • 2 tablespoon(s) Balsamic vinegar
  • 1 Chicken Breast
  • 1 tablespoon(s) Olive Oil
  • 0.5 tablespoon(s) Dijon Mustard
  • 0.5 tablespoon(s) Fresh thyme leaves
  • Black Pepper
  • Sea Salt
  • 1 tablespoon(s) Sun-dried tomatoes

Directions

  1. Chop the thyme leaves.
  2. Combine all ingredients in a bowl except the chicken and the sun-dried tomatoes, and mix well. 
  3. Add the chicken breast to the bowl with the marinade and toss to coat.
  4. Cover the bowl with cling film and leave in the fridge to marinade for at least 30 minutes. 
  5. Heat a frying pan on medium heat and when hot add the chicken with its marinade. Cook for about about 8-10 minutes each side depending on the thickness of the breast, until cooked through.
  6. Serve the chicken topped with some sun dried tomatoes marinated in olive oil and some steamed vegetables on the side.
