  • 1 Garlic clove(s)
  • 8 Cherry tomato(es)
  • 0.5 Zucchini
  • Black Pepper
  • Sea Salt
  • 6 Egg(s)
  • 1 teaspoon(s) Coconut Oil

Directions

  1. Finely chop the onion and garlic.
  2. Dice the zucchini and halve the cherry tomatoes. Make sure the black olives are pitted.
  3. In a large frying pan, heat the oil over medium-high heat. Add the onion and garlic and cook until soft.
  4. Add the zucchini and continue cooking for a couple more minutes. Add the olives and tomatoes, and then the spinach, combine and cook until wilted.
  5. Season with sea salt and freshly ground black pepper.
  6. In a large bowl, whisk the eggs until frothy.
  7. Add the eggs to the pan and cook for a few minutes until the bottom and edges are beginning to set. Then place the pan underneath a hot grill and grill for a few minutes until the top has just set..
  8. Serve immediately.
