- 2 tablespoon(s) Black Olives
- 0.5 Onion
- 1 Garlic clove(s)
- 8 Cherry tomato(es)
- 0.5 Zucchini
- Black Pepper
- Sea Salt
- 6 Egg(s)
- 1 teaspoon(s) Coconut Oil

Directions
- Finely chop the onion and garlic.
- Dice the zucchini and halve the cherry tomatoes. Make sure the black olives are pitted.
- In a large frying pan, heat the oil over medium-high heat. Add the onion and garlic and cook until soft.
- Add the zucchini and continue cooking for a couple more minutes. Add the olives and tomatoes, and then the spinach, combine and cook until wilted.
- Season with sea salt and freshly ground black pepper.
- In a large bowl, whisk the eggs until frothy.
- Add the eggs to the pan and cook for a few minutes until the bottom and edges are beginning to set. Then place the pan underneath a hot grill and grill for a few minutes until the top has just set..
- Serve immediately.
