A frittata is the Italian version of the Spanish tortilla or omelette. The omelette is started off in the frying pan and then popped under the grill to finish setting so the top becomes lovely and golden.

Frittatas are one of the simplest, quickest, most economical midweek meals, and not forgetting completely delicious! They are the best thing when you have a load of veggies or meat in the fridge that you want to use up, you can just throw them all into a pan, add a few eggs and the result is completely epic!

  • 2 tablespoon(s) Olive Oil

  • 0.5 Onion
  • 2 slice(s) Bacon
  • 1 handful(s) Baby Spinach
  • 1 handful(s) Fresh parsley
  • 1 handful(s) Cherry tomato(es)
  • Black Pepper
  • Sea Salt

Directions

  1. Chop the bacon into pieces.
  2. Thinly slice the onion and mushrooms.
  3. Chop the parsley and halve the cherry tomatoes.
  4. Heat the olive oil in a non-stick, ovenproof frying pan over a medium high heat. Also turn on your grill to high.
  5. Fry the bacon pieces in the hot pan for a couple of minutes until lightly browned and crisp. Lift them out using a slotted spoon onto
    a kitchen paper lined plate.
  6. Add the onion to the pan and fry until golden, then add the mushrooms, season with sea salt and freshly ground black pepper, and fry for about 3 minutes until the mushrooms release their juices.
  7. Add the spinach leaves and cook just until the spinach wilts and lastly tip in the tomatoes.
  8. Stir in the parsley and add the bacon back into the pan. Stir everything and spread it out evenly, then pour the beaten eggs over, shifting everything around with a wooden spoon so that the eggs leak into all the gaps.
  9. Cook until the bottom looks softly set, then put the pan under the hot grill until it just sets on top and is a lovely golden brown (It will only take a couple of minutes). Don't overdo it as it is nice when still a little soft in the centre.
  10. Serve immediately.
