Roast Sweet Potato Salad

This is a delicious take on the classic potato salad! 

Sweet potatoes provide good carbs for replenishing glycogen stores, and the homemade 

chipotle mayo is loaded with healthy fats. You won’t miss anything when eating this dish, it’s amazing! 

The salad is very handy for lunch the next day so this recipe makes 2 servings.

  • 450 grams Sweet Potato(es)
  • 3 spring onion(s)
  • 3 tablespoon(s) Homemade Mayonnaise
  • 0.5 tablespoon(s) Chipotle powder
  • 1 pinch(es) Sea Salt
  • 0.25 teaspoon(s) Black Pepper
  • 4 slice(s) Bacon
  • 1 bunch Fresh Chives

Directions

  1. Preheat the oven to 400 degrees F/200 degrees C and line a baking sheet with parchment paper.  
  2. Wash the sweet potatoes and put them on the baking sheet.  
  3. Roast for about an hour or until a sharp knife easily pierces through the sweet potato. 
  4. Remove them from the oven and allow them to cool.  
  5. Meanwhile slice the bacon into strips and fry until crispy.  
  6. When the sweet potatoes have cooled, peel the skin off and cut into large cubes.  
  7. Make the chipotle mayo by mixing the chipotle powder with the homemade mayo.  
  8. Thinly slice the spring onions and chop the chives.   
  9. Add the roasted sweet potato, spring onions, chipotle mayo, salt and pepper to a large 
  10. bowl. Gently stir the mixture so the mayo evenly coats the potatoes but not hard enough to break up the pieces into mush.  
  11. Sprinkle with crispy bacon and chives and tuck in.
