Chicken wings - who doesn’t love them? And the great thing is they're fine to have as long as you don't deep fry them! There are a million different variations on chicken wings but our favourite is the classic chicken wing made with Frank's red hot sauce.  

One thing we don't do is deep fry the wings as it’s completely unnecessary. There is enough fat in the skin and wing to fry itself when you bake it in the oven. 

The trick is to bake them with no sauce first until they are crispy. Then cover them in the sauce and put back in the oven where they will get nice and crisp and the sauce bakes onto the wings.

  • 225 grams Chicken Wings
  • 0.25 bottle Franks Red Hot Sauce
  • 20 grams Ghee

Directions

  1. Cut off the tips and then cut through the joint to separate the 'wing' from the 'mini drumstick'
  2. Put the chicken pieces onto a tin foil lined baking sheet and bake in a 350 degree F/180 degree C oven for about 30 minutes until golden and crisp – longer if you like them really crispy.
     
    Meanwhile in a medium saucepan melt the ghee and add the Frank's hot sauce.
  3. Simmer over a low heat while the wings are in the oven. 
  4. Remove wings from the oven and chuck them into the sauce, toss until well coated.
  5. Put them back on the baking sheet and into the oven for another 30 minutes. If you love them really saucy you can repeat this step.
  6. Serve with carrot and celery sticks and more Frank's hot sauce if you wish.
