These maple roasted parsnip chips are super simple to prepare and are unbelievably delicious. Once you try them you'll make them again and again - a great snack to have in the fridge for heating up whenever you are peckish!

- 500 grams Parsnip(s)
- 60 mL Coconut Oil
- 3 tablespoon(s) Maple Syrup

Directions
- Preheat the oven to 200 degrees C/392 degrees F.
- Peel the parsnips and cut them into chip sized pieces and place into an oven proof dish. Make sure the dish is not overcrowded.
- Pour over 60ml melted coconut oil and toss so the chips are evenly coated.
- Drizzle over the maple syrup and stir to combine well.
- Place in the oven and cook for 15 minutes.
- Remove from the oven and toss the parsnips to allow the other side to brown.
- Place back in the oven and cook for a further 10 to 15 minutes or until golden.
- Remove from the oven and allow to cool a little before serving.
