This casserole takes a bit of time to cook but is so easy to throw together and then you can just forget about it while it's in the oven for a few hours. And it makes for a very filling meal so it's worth the wait!

- 120 mL Chicken Stock
- 1 tablespoon(s) Dried Oregano
- 1 Onion
- 2 Leek(s)
- 1 handful(s) Mushrooms
- 3 Pork tenderloin medallions
- 1 Tinned Tomatoes
- 1 tablespoon(s) Tomato puree
- Black Pepper
- Sea Salt

Directions
- Preheat oven to 160 degrees C/350 degrees F.
- Finely chop the onion.
- Wash the leeks and slice thinly into rounds.
- Thinly slice the mushrooms.
- Now place all of the ingredients into a casserole dish. Mix everything together well with a spoon and season with some sea salt and freshly ground black pepper.
- Cover the dish with the lid or some tin foil and bake in the oven for 1 1/2 to 2 hours.
- To serve, place the pork tenderloins on a plate and spoon all the vegetables and juices over the top.
