This casserole takes a bit of time to cook but is so easy to throw together and then you can just forget about it while it's in the oven for a few hours. And it makes for a very filling meal so it's worth the wait!

  • 120 mL Chicken Stock
  • 1 tablespoon(s) Dried Oregano
  • 1 Onion
  • 2 Leek(s)
  • 1 handful(s) Mushrooms
  • 3 Pork tenderloin medallions
  • 1 Tinned Tomatoes
  • 1 tablespoon(s) Tomato puree
  • Black Pepper
  • Sea Salt

Directions

  1. Preheat oven to 160 degrees C/350 degrees F.
  2. Finely chop the onion.
  3. Wash the leeks and slice thinly into rounds. 
  4. Thinly slice the mushrooms. 
  5. Now place all of the ingredients into a casserole dish. Mix everything together well with a spoon and season with some sea salt and freshly ground black pepper. 
  6. Cover the dish with the lid or some tin foil and bake in the oven for 1 1/2 to 2 hours.
  7. To serve, place the pork tenderloins on a plate and spoon all the vegetables and juices over the top.
