If you’re a fan of pasta and want a healthier alternative, then it’s definitely worth investing in a spiralizer - a vegetable spiral slicer that is super for making zucchini pasta in particular. You can also buy zucchini already spiralized in supermarkets.

Zucchini pasta is better than other vegetable pasta recipes because it produces such good results. Zucchini not only does the trick when spiralized, but also adds a big serving of vegetables to your meal.

  • 1.5 tablespoon(s) Olive Oil
  • 1 handful(s) Cherry tomato(es)
  • Sea Salt
  • Black Pepper
  • 2 slice(s) Bacon
  • 1 Garlic clove(s)
  • 1 pinch(es) Dried chilli flakes
  • 1 large bunch Kale
  • 1 Zucchini

Directions

  1. Spiralize the zucchini into pasta.
  2. Slice the bacon into strips.
  3. Crush the garlic.
  4. Remove the woody stems from the kale and chop the kale.
  5. Heat 1 tablespoon of olive oil in a large frying pan over medium high heat
  6. When hot add in the bacon slices and cook for about 5-10 minutes until the bacon is to your preferred crispiness. Using a slotted spoon, set aside the bacon on a paper-towel lined plate when done.
  7. Pour out half of the bacon fat in the pan and keep the rest in the pan. Add the cherry tomatoes and cook for a few minutes to soften.
  8. Add the garlic, cook for 1 minute and then add in the chilli flakes and chopped kale. Cook the kale until wilted.
  9. Add in the zucchini pasta, and return the bacon to the pan. Stir frequently for about 2-3 minutes or until the zucchini pasta has softened and is coated with everything. Drizzle with about half a tablespoon of olive oil, and season with sea salt and freshly ground black pepper to taste.
  10. Tip the pasta into a bowl and tuck in!
