Directions
- Chop the onion.
- Chop the garlic.
- Combine the cumin, chilli powder, salt, turmeric and cayenne pepper in a small dish.
- Make sure the chicken thighs are skinless and boneless and then slice the chicken thighs into 1 inch strips.
- Wash and top and tail the green beans. Heat a casserole pot or large pan over a medium high heat.
- Once hot, add the ghee. Add the chopped onion and cook for 8 to 10 minutes, stirring occasionally.
- Toss in the chopped garlic and cook an additional 2 minutes, stirring constantly.
- Next add in the spices, cook for about 45 seconds until fragrant, stirring constantly.
- Add the tinned tomatoes, stir to combine and cook for 2 minutes.
- Stir in the chicken along with the stock and bring to a boil. Once boiling, cover, reduce heat to medium and cook for 10 minutes.
- Remove lid, make sure chicken is cooked through by testing a piece. If so, stir in green beans and cook uncovered for about 5 minutes. You want the green beans to be slightly crunchy and bright green, and the sauce to be reduced to a nice thick consistency.
- Serve with a simple green salad or cauliflower rice if you wish.
