This indian recipe is essentially chicken, tomatoes and green beans with a simple yet extremely flavoursome blend of spices. It is perfect for a quick weeknight dinner.

  • 100 grams Green beans
  • 0.5 teaspoon(s) Chilli Powder
  • 1 Tinned Tomatoes
  • 0.5 Onion
  • 0.5 teaspoon(s) Sea Salt
  • 300 grams Chicken thighs
  • 1 Garlic clove(s)
  • 25 mL Chicken Stock
  • 1 teaspoon(s) Ground Cumin
  • 1 tablespoon(s) Ghee
  • 1 teaspoon(s) Turmeric
  • 0.25 teaspoon(s) Cayenne Pepper

Directions

  1. Chop the onion.
  2. Chop the garlic.
  3. Combine the cumin, chilli powder, salt, turmeric and cayenne pepper in a small dish.
  4. Make sure the chicken thighs are skinless and boneless and then slice the chicken thighs into 1 inch strips.
  5. Wash and top and tail the green beans. Heat a casserole pot or large pan over a medium high heat.
  6. Once hot, add the ghee. Add the chopped onion and cook for 8 to 10 minutes, stirring occasionally.
  7. Toss in the chopped garlic and cook an additional 2 minutes, stirring constantly.
  8. Next add in the spices, cook for about 45 seconds until fragrant, stirring constantly.
  9. Add the tinned tomatoes, stir to combine and cook for 2 minutes.
  10. Stir in the chicken along with the stock and bring to a boil. Once boiling, cover, reduce heat to medium and cook for 10 minutes.
  11. Remove lid, make sure chicken is cooked through by testing a piece. If so, stir in green beans and cook uncovered for about 5 minutes. You want the green beans to be slightly crunchy and bright green, and the sauce to be reduced to a nice thick consistency.
  12. Serve with a simple green salad or cauliflower rice if you wish.
