Herb Crust Steak with Grilled Pineapple

This is a fantastic steak rub you can use on any cut of steak. A good tip is to multiply the rub recipe and keep the remaining rub in an airtight container to use again another day.

The pineapples give a sweet and savoury feel to this dish. They are delicious grilled this way and can be served with other grilled meats too.

  • 1 tablespoon(s) Dried basil
  • 1 Ribeye Steak
  • 1 teaspoon(s) Dried Thyme
  • 1 bunch fresh rosemary
  • 1 teaspoon(s) Dried Oregano
  • 0.5 tablespoon(s) Fennel Seeds
  • 0.5 teaspoon(s) ground coriander
  • 1 teaspoon(s) Garlic Powder
  • 1 teaspoon(s) Black Pepper
  • 1 teaspoon(s) Sea Salt
  • 0.5 fresh pineapple
  • 1 tablespoon(s) lemon juice
  • 1 tablespoon(s) Lime juice
  • 1 tablespoon(s) Honey
  • 0.5 teaspoon(s) Ground Cinnamon

Directions

  1. Finely chop the rosemary. 
  2. Crush the fennel seeds in a pestle and mortar.
  3. Combine the thyme, rosemary, oregano, fennel seeds, coriander, garlic powder, sea salt, and black pepper in a bowl and mix well. 
  4. Ensure your steak has sat at room temperature for at least 30 minutes to level out the temperature and then liberally apply your dry rub to each side of your steak, set aside on a plate. 
  5. Mix the lime juice, lemon juice, honey and cinnamon in a bowl and mix well.
  6. Peel and slice the pineapple into 1/2 inch thick slices. 
  7. Using a brush, liberally apply the marinade to both sides of the sliced pineapple. 
  8. Heat a grill pan over a medium high heat.
  9. Drizzle some olive oil over the steak and place the steak and pineapples on the grill pan.
  10. Cook the steak for approximately 4-5 minutes per side or until done to your liking. 
  11. Grill the pineapples for 4-5 minutes per side or until you get nice grill marks and the pineapple has softened a bit
  12. Remove from the grill serve immediately.
