Ginger, Chilli & Lime Sea Bass with Sweet Potato Mash & Sesame Broccoli

This is a really quick and easy healthy meal for midweek but is so impressive you could serve it any day to guests and they would be chuffed! 

The method for sweet potato mash in this recipe is very handy and with the addition of the ginger, chilli, lime & coriander it's an absolute winner for flavour! You could easily adapt this sweet potato mash for other meals using different herbs and spices.

  • 2 Sea Bass Fillet(s)
  • 1 Large Sweet Potato
  • 0.5 Fresh red chilli
  • 3 teaspoon(s) Grated Ginger
  • 2 Lime
  • 2 tablespoon(s) Soy Sauce
  • 1 bunch Fresh Coriander
  • 1 bunch tenderstem broccoli
  • 1 tablespoon(s) Sesame seeds
  • 1 Garlic clove(s)
  • Olive Oil

Directions

  1. Chop the sweet potato into chunks and add to a large, microwave safe, bowl. 
  2. Cut a lime in half and add to the bowl with the sweet potato. Cover the bowl tightly with cling film and microwave on high for 12-15 minutes. It is done when the sweet potato is soft when pierced with a knife. (Tip - cut the sweet potato into smaller chunks to cook faster in microwave)
  3. Meanwhile grate 1 teaspoon of ginger and add to a bowl with the juice of 1/2 a lime. Rub this marinade onto the fish and set aside. 
  4. Next get your ingredients ready to add to the sweet potato mash. Deseed and finely chop the red chilli, grate another 2 teaspoons of ginger, and chop the coriander (reserving a few leaves for garnish)
  5. Steam the tenderstem broccoli in a pot for a few minutes until just cooked, it should have a slight bite to it. 
  6. Add the sesame seeds to a dry frying pan and toast for a few minutes until golden, set aside on a plate. 
  7. Finely slice the garlic.
  8. Once the sweet potato is cooked, remove the cling film carefully as the steam will be very hot. Use a tongs to squeeze any remaining juice from the lime halves into the sweet potato and discard the lime peel. 
  9. Mash the sweet potato and then add the red chilli, ginger, coriander and the soy. Mash everything together again well and set aside while you cook the fish.
  10. Heat a non-stick frying pan over a high heat and add 1 tbsp olive oil. When hot add the sea bass skin-side down and fry for 2-3 minutes until the skin is nice and crispy and the fish is almost cooked. Then flip the fish and fry for 1 minute to finish. Remove to a plate. 
  11. Keep the pan on and add the sliced garlic along with the steamed broccoli. Stir fry really quickly with a dash of soy sauce and remove to plate. 
  12. To serve - Top the sea bass on some of the sweet potato mash and serve the broccoli alongside with a sprinkling of toasted sesame seeds. Garnish the fish with some coriander leaves and some more chopped red chilli if you wish.
