Zucchini pasta with chicken & pesto

This is my favourite healthy pesto recipe! It doesn't contain parmesan like traditional pesto so it's a lot healthier and SO yummy! It works perfectly with the zucchini pasta and chicken for a quick and comforting dinner.

  • 25 grams Pine nuts
  • 1 bunch Fresh Basil leaves
  • 1 Garlic clove(s)
  • 2 tablespoon(s) Olive Oil
  • drop(s) lemon juice
  • Sea Salt
  • 4 Zucchini
  • 2 Chicken Breast
  • 1 teaspoon(s) Coconut Oil

Directions

  1. For the pesto:
  2. Put the pine nuts, basil leaves, olive oil, garlic and pinch of sea salt into a food processor. Blitz all together for a few minutes.
  3. Spiralise the Zucchini.
  4. Heat 1/2 tsp coconut oil in a large pot and add the spiralised zucchini. Leave to cook for about 15 mins until softened, then drain off any excess liquid.
  5. Meanwhile, chop the chicken breasts. Heat 1/2 tsp coconut oil in a frying pan and add the chicken. Season with sea salt and freshly ground black pepper. Cook until done. 
  6. Add the cooked chicken and pesto into the softened zucchini, mix all together and enjoy!!
