Spice Rub Pork Tenderloin with Roast Carrot Fries

This recipe is so simple to prepare and tastes so good, it's the perfect Fito roast! The spice rub creates a gorgeous crust which gives an amazing flavour. 

Pork tenderloin tends to be sold pre-packaged in supermarkets and are about 400-500grams in weight. We recommend roasting the whole thing which serves 2 so if you're having it for dinner on your own then use the leftovers for lunch the next day! 

We've served it with our roast carrot fries here, but roast sweet potato fries would also work well.

  • Coconut Oil
  • 1 teaspoon(s) Ground Cinnamon
  • 2 teaspoon(s) Ground Cumin
  • 500 grams Pork tenderloin fillet
  • 1 teaspoon(s) ground coriander
  • 1 teaspoon(s) Garlic Powder
  • Sea Salt
  • Olive Oil
  • 2 Garlic clove(s)

Directions

  1. Preheat the oven to 200 degrees C/400 degrees F.

    In a bowl mix together the garlic powder, oregano, 1 of the teaspoons of ground cumin, the ground coriander, dried mint and salt.
  2. Stir well until combined. This is your spice rub.
  3. Place your pork tenderloin in a separate large bowl. Tip the spice rub over the pork and using your hand, rub the spices all over the meat so it's completely covered, pressing gently so it sticks to the meat.
  4. Crush the garlic cloves. 
  5. Put a large non-stick frying pan over a high heat and add 1 tablespoon of olive oil.
  6. When the pan is hot add the crushed garlic, stir for a few seconds and then place the pork tenderloin in the pan. Cook for about 8-10 minutes, searing all sides, using tongs to rotate the meat.
  7. Meanwhile cut the carrots into thin sticks. Try to make the fries roughly the same size so they’ll cook evenly.
  8. Tip the carrot fries onto 2 baking sheets, making sure to space them out well or else they won't crisp up nicely!
  9. Drizzle the carrot fries with 2 tablespoons of melted coconut oil and sprinkle with 1 teaspoon of ground cinnamon, 1 teaspoon of ground cumin, and pinch of salt.
  10. Toss everything with your hands until the carrots are evenly coated.
  11. Roast the carrots in the oven for 25-30 minutes or until they’re lightly brown and crispy on the edges.
  12. At this stage you can also transfer the meat, once you've seared it, to a roasting dish and bake for 20-25 minutes until cooked through.
     
    Slice the pork and serve with the roast carrot fries.
