Zucchini Spaghetti with Harissa Paste & Chicken

Harissa is a North African hot, aromatic paste made from roasted red peppers, chillies and other spices. This recipe makes a large batch so you can store it in the fridge for a few weeks.

It is absolutely delicious as a dip or sauce to go with lots of things, especially zucchini spaghetti! You won't miss pasta when you try this stuff!

You can spiralize the zucchini yourself or buy it already spiralized in any large supermarket.

  • 4 Red pepper
  • 2 tablespoon(s) Tomato puree
  • Olive Oil
  • 3 Fresh red chilli
  • 4 Garlic clove(s)
  • 1 tablespoon(s) Ground Cumin
  • 1 tablespoon(s) smoked paprika
  • 2 tablespoon(s) Red Wine Vinegar
  • Sea Salt
  • Black Pepper
  • 1 Chicken Breast
  • Coconut Oil
  • 2 Zucchini

Directions

  1. Preheat the oven to 400F/200C.
  2. De-seed and dice the red peppers.
  3. Place them in a roasting tray, drizzle with a teaspoon of olive oil and roast in the oven for 30-40 minutes.
  4. Meanwhile, de-seed the chillies and place in a food processor along with the peeled garlic cloves, the cumin, smoked paprika, tomato puree, and 1/2 teaspoon sea salt. Blitz until it forms a smooth paste.
  5. Now add the roasted red peppers and vinegar and blitz again until smooth. Set aside while you prepare the chicken and Zucchini.
  6. Season the chicken with sea salt and freshly ground black pepper, sprinkle with some smoked paprika, and rub with 1 teaspoon olive oil.
  7. Place in a baking dish and bake in the oven for 15-18 minutes until cooked through.
  8. Meanwhile, spiralize the zucchini.
  9. Heat a large pot and add 1/2 teaspoon coconut oil, then add the spiralized zucchini.
  10. Season with sea salt and freshly ground black pepper and stir frequently.
  11. The zucchini will release a lot of water so drain this half way through cooking and return the pot to the heat to cook fully until soft. It will take about 8-10 minutes in total.
  12. Once cooked stir in some harissa paste and mix through.
  13. Serve the harissa zucchini spaghetti with the smoked paprika chicken on the side.
