Directions
- Preheat the oven to 200 degrees C/400 degrees F.
- Finely chop the onion.
- Finely chop the fresh coriander.
- Add the minced beef, chopped onion, chopped coriander, and dijon mustard in a large bowl. Season with sea salt and lots of freshly ground black pepper, and stir to combine well.
- Using your hands, shape into two roughly equal-sized patties.
- Place the patties on a plate, cover with cling film and refrigerate while you make the sweet potato fries.
- Chop the sweet potato into long thin fries. No need to peel the sweet potato (the skin has very good nutrients in it!)
- Put the sweet potato fries in a roasting tray, making sure they are not too crowded on the tray. Add 0.5 tablespoon of olive oil and toss to coat evenly in the oil.
- Season with sea salt and freshly ground black pepper and roast in the preheated oven for 35-40 minutes or until the edges are turning brown.
- When the sweet potato fries are about 10 minutes from being done, heat a non stick frying pan over a medium high heat.
- Remove the burgers from the fridge and rub them with 0.5 tablespoon of olive oil.
- Place the burgers on the hot pan and cook for about 5 minutes each side until cooked through.
- While the burgers are cooking, chop the gherkins into slices.
- When done, spread some american mustard and small amount of homemade mayonnaise on the burgers and top with sliced gherkins.
- Serve with the sweet potato fries and tuck in!
