These scones are a delicious Paleo treat, and very simple to make! Feel free to vary the dried fruit ­chopped dates, dried apricots or sultanas would make for a lovely alternative!

  • 1 teaspoon(s) Salt
  • 1 Egg(s)
  • 1 teaspoon(s) Bicarbonate of Soda (baking soda)
  • 2 teaspoon(s) Honey
  • 3 teaspoon(s) Desiccated Coconut
  • 60 grams Dried Cranberries
  • 250 grams Ground almonds

Directions

  1. Preheat oven to 375 degrees F/180 degrees C.
  2. Mix together the honey and egg in a large bowl.
  3. Stir in the remaining ingredients and use your hands to bring the mixture together into a dough.
  4. Tip onto a work surface dusted with almond flour and knead briefly.
  5. Shape into ½ inch thick scones with your hands or with a scone cutter if you have one!
  6. Bake on a floured or greased baking tray for about ten minutes or until cooked through.
