Shepherd's Pie

We've replaced white potatoes with sweet potatoes in this version of shepherd's pie because they are loaded with antioxidants and fibre.

This makes a large batch so freeze the leftovers for another day!

  • 900 grams Minced Beef
  • 2 tablespoon(s) Olive Oil
  • 4 Garlic clove(s)
  • 1 Onion
  • 2 Carrot(s)
  • 200 grams Mushrooms
  • 400 grams Frozen peas
  • 140 grams Tomato puree
  • 2 tablespoon(s) Balsamic vinegar
  • 1 large bunch fresh rosemary
  • 1 bunch Fresh thyme leaves
  • 4 Sweet Potato(es)
  • 1 Lime
  • Sea Salt
  • Black Pepper

Directions

  1. Preheat your oven to 350 degrees F/180 degrees C.
  2. Chop the onion and crush the garlic.
  3. Chop the carrots into dice.
  4. Thinly slice the mushrooms.
  5. Roughly chop the rosemary and thyme. 
  6. Thaw the frozen peas. 
  7. Add 1 tablespoon of olive oil to a large frying pan over a high heat. Brown the minced beef and then remove from the pan and set aside.  
  8. Add another tablespoon of olive oil to the pan and add the onion, garlic, carrots, and mushrooms. Cook until the carrots are soft and onions are translucent.
  9. Add the meat back to the pan, and add the tomato paste, balsamic vinegar, rosemary, and thyme. Season with sea salt and freshly ground black pepper.
  10. Cook until all of the excess liquid has cooked off and then stir in the peas.
  11. Meanwhile make the sweet potato mash. 
  12. Peel the sweet potatoes and quarter them. Place in a large heatproof bowl and add two lime halves. 
  13. Cover the bowl in cling film and cook in the microwave for 10-15 minutes or until the sweet potatoes are soft. 
  14. Remove the lime halves with a tongs as they will be very hot! 
  15. Mash the sweet potatoes with a masher. 
  16. Pour the meat mixture into a large baking dish.
  17. Spread the sweet potato mash on top of the meat mixture.
  18. Bake the shepherd's pie for 15 to 20 minutes, or until the sides are bubbling and the centre is piping hot.
