Avocado & Zucchini Hummus

This is an interesting alternative to the traditional hummus. The chickpeas are replaced with a combination of zucchini and avocado, and the result is something that looks a lot like hummus, and tastes delicious too! All of the other ingredients in hummus are present, like garlic, tahini, lemon juice, and cumin, so you should be very happy with the result! 

It will keep in the fridge for 4-5 days.

  • 1 pinch(es) Paprika
  • 1 Zucchini
  • 1 tablespoon(s) Avocado
  • 1 Garlic clove(s)
  • 2 teaspoon(s) lemon juice
  • 1 teaspoon(s) Ground Cumin
  • 3 teaspoon(s) Tahini Paste
  • 1 teaspoon(s) Olive Oil

Directions

  1. Peel and chop the zucchini into small dice. 
  2. Scoop out about one quarter of an avocado to get a generous tablespoon of avocado. 
  3. Put all the ingredients into a food processor and blend until smooth. Add some more olive oil if you feel it needs it to reach the right consistency. 
  4. Taste and tweak any of the flavours to your liking. 
  5. Dust with paprika and serve with some carrot sticks or other veggie sticks of your choice.
