Lamb chops have a distinctive taste and a rich, succulent texture unlike anything else. Mint sauce with Lamb is a classic combination and the grilled asparagus goes really well here too.

- 2 Lamb chops
- 1 tablespoon(s) Olive Oil
- Black Pepper
- Sea Salt
- 1 handful(s) Fresh mint leaves
- 4 tablespoon(s) Cider Vinegar
- 1 tablespoon(s) Maple Syrup
- 5 Asparagus

Directions
- Finely chop the mint leaves.
- Bend the asparagus spears until they snap and discard the woody ends.
- Rub the lamb chops with some olive oil and season with sea salt and freshly ground black pepper. Do the same with the asparagus.
- Preheat a grill pan over a medium high heat. Add the lamb chops and asparagus and cook for 8 to 10 minutes, turning them halfway through the cooking time.
- Put the chopped mint in a bowl and add the maple syrup and pour over 4 tablespoons of boiling water, stir and leave to cool. Stir in the vinegar and taste. Add more water or vinegar and adjust seasoning to suit your taste.
- Serve the lamb chops with some mint sauce drizzled over and the asparagus on the side.
